Downtown Boise's Newest Ice Cream Shop Offers Vegan Treats And Alcohol Pairings

Jul 18, 2017

The STIL is the name of the new ice cream shop that will be opened in the BODO section of Downtown Boise. The acronym stands for The Sweetest Things In Life. But the shop has some things on the menu that aren’t for kids.

Kasey Allen, co-owner of The STIL, explains the shop's concept.

"We do flights of beer and ice cream, and flights of wine and ice cream. We also do affogatos, which is a scoop of ice cream with a shot of espresso poured over the top."

Allen says he and co-owner Dan Sell opened the shop because they saw a gap in Boise’s local ice cream market. The STIL’s focus is on sourcing ingredients locally.

"So we use Reed’s Dairy from Idaho Falls. And then In terms of our berries and our mint and our peanut butter and all those things, we try to support locally as much as we can," says Allen.

Some popular flavors at The STIL include maple bacon and dark chocolate raspberry, we well as vegan options. The shop officially opened last weekend on National Ice Cream Day.
